Flatbread Pizza Night

The kids love pizza night, and so do I. Finding a way to still enjoy pizza night without all the extra calories and greasy take-out boxes was a must do on the list of things to accomplish this summer.

These flat breads are inexpensive and everyone can add their own topping selections, so there’s no arguing over what toppings to get. Everyone’s happy, it’s both fun and delicious.

This is my favorite – olive oil base with oregano, basil and minced garlic spread on the flat bread, sliced mushrooms, sliced tomatoes, and a lean turkey sausage.

A few people asked where to get the flat breads we used for our pizzas – we found them in the bakery section along with the sandwich wraps near the fresh bread. They’re only a few dollars a bag, just add your favorite sauce, cheese, and toppings and toss in the oven at 400 degrees for a few minutes!

A few years ago I had gotten really sick with a mystery infection that put me in the hospital for over a week. When I got home I wasn't much better off. I had to have foot surgery and was laid up on the sofa for awhile.
