London Broil, Potatoes, Beets

This dinner came together pretty simply. I coated the London Broil with smoked paprika, salt, pepper and celantro dry rub and cooked it in a preheated 350 degree oven for 18-20 min (veries on the size of the roast). I also boiled the potatoes and then tossed them with olive oil and seasonings. And the beets were super easy for me, my mother-in-law canned these from her garden and sent a few jars home with us when we were in Pennsylvania.

This is the second year she has canned beets from the garden and they are amazing. We don’t even buy canned beets at the grocery store anymore, because they just can’t compare to these, they’re delicious. She also did pickles, salsa, tomato sauce, peppers, and green beans. Maybe we can get her to share some info with us here on the blog about that soon.
