The Magic of Meatloaf

Most times when I made a meatloaf for dinner in the past, I would use ground beef and ground turkey, and  load it up with bread crumbs and seasoning. Tonight, however,  was different.

Instead of ground beef I used a lean ground chicken, and to rid myself of white bread and rid gluten for my wife Loretta who has a gluten allergy, I used Quaker lightly salted rice cakes for a binder. Of coarse the usual diced yellow pepper and onion, and don’t forget the cumin mixed together and topped with a no salt added sauce which I added some basil, oregano, and garlic salt of my own.

Just add some smashed potatoes and a small salad on the side and you have yourself a lean dinner that everyone one will love.

What’s your favorite meatloaf recipe?

Enjoy your time in the kitchen,
Brian

About Brian

A few years ago I had gotten really sick with a mystery infection that put me in the hospital for over a week. When I got home I wasn't much better off. I had to have foot surgery and was laid up on the sofa for awhile. In that time I watched alot of Food Network and really gained a passion for food and it's preparation, cooking for my family was something I could still do even when I wasn't feeling my best and it was a way to help myself reach a healthier goal as well. Now I find myself always looking for healthier options that still taste wonderful and with my wifes gluten allergy I have even more of a challenge of feeding everyone. Honestly ... I am loving every minute of it. Because my kitchen has become my place of Zen.

This sounds like a yummy version of meatloaf and interesting idea for replacing the gluten ingredients. I have bookmarked this and look forward to trying it in the near future.

I like to add simple recipes to my blog too that will inspire other cooks to find the same joy of cooking that I do. I like your blog and will be back to read more yummy ideas from you.
