Vegetable and Turkey Stew in the Crockpot

When I was growing up my parents would make hamburger soup because it was inexspesive and easy to make. So this is my way of paying homage to my parents. I made a hamburger soup my way.

Veggie & Turkey Stew in the Crockpot

In a crock pot combine:

  • 1 pound ground turkey
  • carrots
  • potatoes
  • 2 cans of cream of mushromm soup (Progresso makes a gluten free CoMSoup)
  • 1 1/2 cups of shreaded chedder cheese
  • 3/4 cup of milk
  • minced garlic
  • basil, oregano, salt and pepper (seasons can be mixed or matched to your preferance)

I was disappointed the grocery store didn’t have any parsnips, they would have made a nice addition to this stew. You might want to try adding parsnips or other vegetables depending on what’s available to you.

Let it cook all day and serve with a little cheese on top.

We’ve been using the crockpot a lot more lately, it sure does come in handy when you’re busy and it’s perfect for a Fall stew.

A few years ago I had gotten really sick with a mystery infection that put me in the hospital for over a week. When I got home I wasn't much better off. I had to have foot surgery and was laid up on the sofa for awhile. In that time I watched alot of Food Network and really gained a passion for food and it's preparation, cooking for my family was something I could still do even when I wasn't feeling my best and it was a way to help myself reach a healthier goal as well.   1. I put this in the crockpot this morning with a few alterations. I omitted potatoes since I didn’t have any. I seasoned the turkey using a turkey sausage recipe and then browned it in a pan for a bit. Carrots, celery, broccoli, onion, and about 3 cups of chicken broth I had left over from another meal. Also added pepper and a couple of bay leaves. It smelled so good!!
