Noah’s Burrito Lasagna

Noah and I were at the grocery store and were looking at the many taco kits the store had to offer and there was a kit for a taco bake. Noah started constructing the ingredients in his mind and building this dish. I thought it sounded good so we gave it a try.

Burrito Lasagna

I used whole wheat burrito shells as I would typically use lasagna noodles and enchilada sauce as the sauce.
Sauce the bottom of the dish then add a layer of tortilla shells.
Then, in any order, add a layer of fat free refried beans or black beans (optional) and sauce, tortilla shell, seasoned ground turkey with 2 wedges of Laughing Cow queso cheese, tortilla shells and another layer of ground turkey and cheese and sauce.
Top with with another layer tortilla shells and sauce, cover and bake at 400 degress for about 20 to 30 minutes.

Top however you’d like. I used diced tomatoes and onion, broccoli slaw mix, light sour cream, and a touch of cubed avocado.

I had to have foot surgery and was laid up on the sofa for awhile. In that time I watched alot of Food Network and really gained a passion for food and it's preparation, cooking for my family was something I could still do even when I wasn't feeling my best and it was a way to help myself reach a healthier goal as well.
