Chicken Two Ways with Cucumbers, Tomatoes and Salad

Chicken was served up two ways with some nice light sides in vinaigrette.

The first chicken was pounded thin and then rolled up with fresh spinach leaves.

The second chicken was cooked in the no calorie gluten free barbecue sauce, a splash or two of Captain Morgan spiced rum.

Cucumbers and tomatoes were tossed in olive oil, salt, pepper, and a handful of beautiful basil.

It’s always a good sign when there are no leftovers ;)

A few years ago I had gotten really sick with a mystery infection that put me in the hospital for over a week. When I got home I wasn't much better off. I had to have foot surgery and was laid up on the sofa for awhile.
