Consider making Eggplant with Silan Sauce or Eggplant Gazpacho. You can find many recipes for main courses that use this succulent vegetable. Stuffed Eggplant, Greek Moussaka and Eggplant Bolognaise Lasagna are only a few of the recipes you’ll find. For an added twist, make the Balsamic and Ginger Eggplant Jam.
