Gluten Free Grilled Waffle Sandwiches

Trying to do a little something different for a quick and easy dinner, we had these grilled waffle sandwiches. A panini press would be great for these if you have one handy, but we just used a skillet on the stove and they came out fine.

Waffle Sandwiches

I used Van’s Gluten Free frozen waffles, thawed or lightly toasted in the toaster. Add your favorite lunch meat and cheese and grill in a skillet or a panni press. Tonight we used baked ham, prosciutto, thin sliced granny smith apples, and slices of mild chedder cheese. Add a salad and you have a fun and delicious dinner that only takes minutes to make.

A few years ago I had gotten really sick with a mystery infection that put me in the hospital for over a week. When I got home I wasn't much better off. I had to have foot surgery and was laid up on the sofa for awhile.
