Pizza Burgers on the Grill

The boys each get to request whatever they want to eat on their birthday. We can go out to eat or I’ll make them something by special request, and sometimes we’ll do both – go out for breakfast and cook special request dinners at home. Lucas turned 14 this month and he requested dinner on the grill and he asked Loretta to bake a root beer flavored cake he saw on Pinterest and make it gluten free. Tall order, right?

Dinner turned out pretty good. We grilled the burgers on the grill and added pepperoni and provolone slices at the end. Those were a big success. On the sides we had skillet potatoes and baked beans.

The cake that he requested turned out so well that I’m afraid we don’t have any pictures of it to share! We’ll have to whip one up for Memorial Day weekend and get pictures before the kids dig in this time.

A few years ago I had gotten really sick with a mystery infection that put me in the hospital for over a week. When I got home I wasn't much better off. I had to have foot surgery and was laid up on the sofa for awhile. In that time I watched alot of Food Network and really gained a passion for food and it's preparation, cooking for my family was something I could still do even when I wasn't feeling my best and it was a way to help myself reach a healthier goal as well. Now I find myself always looking for healthier options that still taste wonderful and with my wifes gluten allergy I have even more of a challenge of feeding everyone. Honestly ...
