Meatloaf with Stuffed Mushrooms

We have meatloaf nice about once a week and we make it differently every time! We realized we didn’t have anything gluten free to use in place of breadcrumbs – usually we add cheese, rice chex, left over rice or something along those lines instead of breadcrumbs. Loretta asked for stuffed mushroom cups, so I chopped up the mushroom stems and a few of the smaller mushrooms and used that instead of breadcrumbs, it worked out great.

A few years ago I had gotten really sick with a mystery infection that put me in the hospital for over a week. When I got home I wasn't much better off. I had to have foot surgery and was laid up on the sofa for awhile.
