Easy Pie Recipes for Holidays or Any Day

10274268_f260No matter what your favorite flavor is or what kind of crust you like, there’s no doubt that pie is the perfect holiday dessert for any holiday.

So today we’re going to take a quick glimpse in to the world of pie with these traditional holiday pies, starting with an easy to make from scratch pie crust recipe.

Then we’ll go over Pumpkin Pie, Apple Pie, and Blueberry Pie recipes that are affordable and easy to make this holiday season (or any random day that feels like it deserves a pie!)


Let’s start with an easy to make and easy to adapt crust…

All Butter Pie Crust
because pie crust from scratch isn't as difficult as it sounds...

Ingredients
  1. 1½ cups sifted flour
  2. ½ cup chilled butter cut into cubes
  3. ½ teaspoon salt
  4. 3 tablespoons cold water
Instructions
  1. Combine flour and salt in a large bowl. Add the butter cubes and blend with a fork or your fingers until mixture is well blended. Gradually add the water, 1 tablespoon at a time, mixing the dough gently after each addition. Once dough is well blended shape into a large ball, wrap in cling film and place in refrigerator for approximately 20 to 30 minutes.
  2. Remove the dough from fridge and placed onto a floured surface. Using a rolling pin roll dough to form a 10 to 11 inch circle. Line a 9 inch pie pan with dough and chill until ready to use. Reserve remaining dough to top pie crust.

Easy Pumpkin Pie

Ingredients
  1. 2 cups pureed pumpkin
  2. 2 eggs (beaten)
  3. 1/2 teaspoon salt
  4. 1 1/4 cups brown sugar
  5. 1 (12 ounce) can evaporated milk
  6. 1 teaspoon cinnamon
  7. 1 teaspoon nutmeg
  8. ½ teaspoon cinnamon
  9. 1/4 cup butter (melted)
  10. 1 pie crust
Instructions
  1. In a large bowl, combine all ingredients and mix well.
  2. Pour batter into pie crust.
  3. Bake in preheated oven at 350F for approximately 60 minutes or until set through.
Notes
  1. optional topping;
Topping
  1. 1 pkg cream cheese
  2. 1 cup whipped cream
  3. ½ cup powdered sugar
  4. Blend all ingredients together and use to top pie.

Lattice Apple Pie

Ingredients
  1. 8 cups peeled and sliced granny smith apples (or other tart apples)
  2. 2 tablespoons all purpose flour
  3. 1 cup sugar
  4. 1 teaspoon cinnamon
  5. ½ teaspoon nutmeg
  6. Dash of salt
  7. 2 teaspoons fresh lemon juice
  8. 2 tablespoons butter
  9. 1 egg yolk
  10. 1 tablespoon water
Instructions
  1. Preheat oven to 375F.
  2. In a large bowl combine apple slices, sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Place mixture into pie crust.
  3. On a lightly floured surface roll remaining pastry dough and cut into strips. Place strips on top of apple pie making a crisscross pattern. Mix the egg yolk and water in a small bowl and lightly brush the top of the pie.
  4. Bake for approximately 45 minutes.
  5. Serve warm topped with custard or whipped cream.

Warm My Heart Blueberry Pie

Ingredients
  1. 3 cups blueberries
  2. 3 cups sliced peeled pears (3 to 4 med pears)
  3. 2/3 cups sugar
  4. 3 tablespoons all purpose flour
  5. 1 teaspoon ground cinnamon
  6. 1/2 teaspoon ground nutmeg
  7. 1 teaspoon lemon juice
  8. TWO 9-inch piecrusts
  9. 1 tablespoon butter, chilled, cut up
Instructions
  1. Place pears, sugar, flour, cinnamon and nutmeg in a large mixing bowl.
  2. Stir until all ingredients are combined. Carefully fold in blueberries and lemon juice.
  3. Using a 9-inch pie plate, place one crust in the bottom being sure it fits snuggly to the bottom and sides of the pie plate. Place the pie filling into the crust.
  4. Dot the top of the pie filling with the cutup pieces of butter. Place the second piecrust on top.
  5. Crimp the edges and cut off any extra. Make 4 small slits in the top crust to vent steam.
  6. Bake 1 hour or until crust is a golden brown.
