Dylan requested stuffed peppers, and I know green peppers are usually used for this, but none of us like green peppers – so instead we used orange, yellow, and red peppers. Everyone said not to cook the rice before stuffing the peppers, but I think they must have been using instant rice, which I was not using, so the rice had a bit of a crunch. Oops.
Even my wife, who really dislikes stuffed peppers, tried one and said it was much better than the usual green stuffed peppers she was used to tasting. Next time I’ll get the rice right and let the peppers cook longer so it will be almost perfect.
