Holiday Cooking Slow Style with Beef & Barley

This time of year you find it hard to make time to cook dinner, and find yourself eating take out or eating pre-made dinners. This is where a slow cooker comes in handy.

Crockpot Beef and Barley

I was reading a recipe featured in the November issue of the Food Network Magazine for slow-cooker beef and bareley. I made a few tiny changes to it to fit our preferences and what I had available.

1 Beef Roast
1 bag of Pearl Barley
3 Celery Stalks (chopped)
1 bag of Baby Carrots
Beef Stock 46oz
and water

Sesame Beef, Broccoli, and Rice Sticks

I went a little Asian inspired for this one by marinating beef tips in sesame oil (130 calories per 1 Tbsp serving so be very careful) Chili Garlic sauce (0 calories per 1 tsp serving but does have some heat but lots of flavor so also be careful) 1 tsp of ground ginger and a generous portion of sesame seeds in a large bowl.

Beef, Brocolli, and Rice Sticks

Heat a large non stick skillet and pour the beef tips and marinade in to the pan. Stir the beef and add a little rice vinegar to keep the beef from burning and build up the sauce a little. When the beef has browned up on the outside remove it from heat and serve with presoaked Maifun Rice Sticks, rice or rice noodles and steamed broccoli.
