The Magic of Meatloaf

Most times when I made a meatloaf for dinner in the past, I would use ground beef and ground turkey, and load it up with bread crumbs and seasoning. Tonight, however, was different.
Instead of ground beef I used a lean ground chicken, and to rid myself of white bread and rid gluten for my wife Loretta who has a gluten allergy, I used Quaker lightly salted rice cakes for a binder. Of coarse the usual diced yellow pepper and onion, and don’t forget the cumin mixed together and topped with a no salt added sauce which I added some basil, oregano, and garlic salt of my own.
Just add some smashed potatoes and a small salad on the side and you have yourself a lean dinner that everyone one will love.
