- 2 shots of Captain Morgan spiced rum
- juice of 2 limes
- 1 tbsp tarragon leaves
- 1 tsp of salt
- 1 tsp of fresh cracked black pepper
- 1 cup of low sodium chicken stock
Then I gave the chicken a quick sear before adding the rest of the marinade to the pan along with 1 orange pepper diced sliced button mushrooms. I removed the chicken and let the sauce reduce down.
Served up with a side salad and steamed vegetables it came out really nicely.
I wasn’t sure how the kids would react to this dinner, but everything was gone in minutes, they even had seconds.
