Tangy Crockpot Chicken Made Gluten Free

Brian has to have his hand looked at by the doctor this week so it looks like it will be up to me to do some cooking around here for a few days. That used to mean pizza or whatever else I could get delivered, but this year we really made a lot of changes to our daily diet and there aren’t many things on a takeout menu that anyone in our house would even want … and with a gluten allergy I can’t eat most of it anyway. So I decided to turn to my old friend the Crockpot to help me out with some cooking.

I need a recipe to follow when I’m cooking dinner or I’ll just make a mess and it certainly won’t taste very good. Brian can just whip an idea out of thin air and put together his own recipe creation, I need something written down with measurements and directions and temperatures. I wanted to do something different than my usual pot roast in the Crockpot so I paid a visit to HillbillyHousewife.com and started browsing the Crockpot recipes.

Three Stuffed Peppers Sitting in a Row

Dylan requested stuffed peppers, and I know green peppers are usually used for this, but none of us like green peppers – so instead we used orange, yellow, and red peppers. Everyone said not to cook the rice before stuffing the peppers, but I think they must have been using instant rice, which I was not using, so the rice had a bit of a crunch. Oops.

Even my wife, who really dislikes stuffed peppers, tried one and said it was much better than the usual green stuffed peppers she was used to tasting. Next time I’ll get the rice right and let the peppers cook longer so it will be almost perfect.

Sweet Paprika Chicken, Lime Rice, Salsa Verde, and Broccoli

Well, I’d share a picture here, but it’s all gone. It was that good. The other day I picked up some beautiful seasonings at FreshMarket and thought I’d give them a try with dinner tonight. we were not disappointed.

I put a touch of cilantro in the rice with some lime juice and it was a great light touch giving it just enough flavor to be different than your usual plain jane rice. I seasoned the chicken with sweet paprika and a little bit of olive oil. The broccoli (which everyone said was amazing) were steamed in the pan with chicken broth and sprinkled with red pepper flake and a tiny drizzle of olive oil. I also halved some grape tomatoes and tossed them in olive oil with sweet basil and garlic. Those paired nicely with the broccoli and the rice.

On the surface it was your average dinner of chicken, broccoli and rice, but a few little twists of lime and a dash of seasoning really made it a wonderful dinner, worthy of any dining table.
