My wife and I were watching the Next Food Network Star and Jeff had used Tofu because he could not find ground turkey or chicken, with what seemed like great success. So tonight I decided to to try my hand had at making Tofu, mind you this was my first try … ever.
I decided to make a Tofu Taco by first sweating off some onion and garlic in a frying pan before adding the the soft Tofu I had already cubed. I added a pinch of salt, a generous portion of Adobo, cilantro and just a dash of red pepper flakes for a hint of heat.
About half way through I had to drain the liquid from the pan, and after that I threw in my zucchini cuts and kept it flowing so not to burn.
Using romaine lettuce leafs as the delivery vessel was a fun twist and I topped it all off with seasoned cut grape tomatoes, salsa verde and goat cheese crumbles with a side of pine nut couscous.
Tonight’s dinner was a surprise hit and one that I hope inspires you to try new foods.

Well, I’d share a picture here, but it’s all gone. It was that good. The other day I picked up some beautiful seasonings at FreshMarket and thought I’d give them a try with dinner tonight. we were not disappointed.
